Calypso Mojo Relish



  • 75g dried black beans, soaked overnight
  • 25g frozen sweet corn kernels, defrosted
  • 1 small mango, peeled, cut into 0.5cm dice
  • 2 tbsp chopped fresh mint
  • 1 tbsp olive oil
  • ½ small red onion, thinly sliced
  • ½ garlic clove, crushed
  • Juice of 1 lime

To Make:

1.       Drain the beans, place in a pan, cover with water, and boil for 40-50 minutes or until soft. Drain and allow to go cold.

2.       Place the beans in a bowl, stir in remaining ingredients, and leave to infuse for 30 minutes before using.
