- 75g dried black beans, soaked overnight
- 25g frozen sweet corn kernels, defrosted
- 1 small mango, peeled, cut into 0.5cm dice
- 2 tbsp chopped fresh mint
- 1 tbsp olive oil
- ½ small red onion, thinly sliced
- ½ garlic clove, crushed
- Juice of 1 lime
To Make:

Drain the beans, place in a pan, cover with
water, and boil for 40-50 minutes or until soft. Drain and allow to go cold.
2.
Place the beans in a bowl, stir in remaining
ingredients, and leave to infuse for 30 minutes before using.
